Start xcdroast as root, go to Create CD, then Master Tracks. You should see your directory tree in the right window. Select the files/directories you want and add them to the left window. Then you have to create the image. After that you can burn the image to the CD (Write Tracks). I skipped a few tricky details, but that's the general procedure. Let me know if you want more.
