This isn't really the same type of application I'm looking for - this is more like a to-do app...

 

I'm looking for a tool that will generate project related info (the standard PERT, critical path, Gantt, etc.) based on some data.

 

Thanks for the idea of a wiki though - I may be able to use that for something else!

Have you considered a wiki?  It won't autoproduce the fancy PERT and Gantt
charts (though you can ASCII art them!), but otherwise works well for planning.
I use Tomboy [1] for solo projects.
