Start xcdroast as root, go to Create CD, then Master Tracks. You should see your directory tree in the right window. Select the files/directories you want and add them to the left window. Then you have to create the image. After that you can burn the image to the CD (Write Tracks).
I skipped a few tricky details, but that's the general procedure. Let me know if you want more.
I've found xcdroast alot more intuitive than k3b. You do need to first run it as root to do the setup stuff and to enable non-root users the privilege of running the tool. After that, it should be smooth sailing as described by Greg (above).
Let us know if you're still stuck on something.

Thanks everyone, The "Master Tracks" was they key, however, it's not very smooth, and that seems to be caused by not having a CD in the read drive. (My machine has a DVD drive and a CDR.) So, if I just have a blank in the CDR, xcdroast tries to read the DVD & times out. The time out is quite long. Once I get past that, I can get to "Master Tracks" and I can then make progress. All in all, though, I made better progress with less frustration with using mkisofs & cdrecord directly. Thanks for your help. Bill
