I really like my Keychron v1 75% (function keys but no numpad).

It's good a really heavy aluminum base, hot swap keys, and replaceable caps. Keeb dorkdom is a REALLY deep rabbit hole as has already been said, but with something like this you get a very useful keyboard that you can build on later should you desire.
